In 1929, Ellis Huntsinger founded Silver Spring and its subsidiary Food Company. It was then that he began planting wasabi and other vegetable crops on several acres of land near Freshwater Springs south of Oakler, Wisconsin. In the early days, Ellis handcrafted and bottled horseradish in an old milk shed behind his house. He sold local freshly ground wasabi during the cold winter in Wisconsin to increase income. Silver Spring now grows wasabi on more than 7,000 acres of high-quality farmland in Wisconsin and Minnesota, and grows corn, soybeans, kidney beans and other forage crops in a cycle of five or seven years. Horseradish harvested in spring and autumn is immediately refrigerated until processed, bottled, and then sold to the global market under the brand.
